Chocolate Lava Cake, in a Mug

I don’t know if you’ve ever had a lava cake before, but if you have you know they are delicious and a little tricky when It comes to actually making them, so I developed this recipe to help make that easier! The traditional lava cake is filled with a little bit of uncooked batter, but this lava cake is filled with melted dark chocolate! Simply delicious, and it’s single-serving so you don’t need a bunch of ingredients!



Ingredients

  • 1/4 cup gluten free flour
  • 1 tablespoon cocoa powder
  • 5 tablespoons soy or coconut milk (or almond, cashew, etc.)
  • 1/4 teaspoon baking powder
  • 1 1/2 tablespoons sugar
  • Pinch of salt
  • 2 tablespoons vegetable oil
  • A bar of dark chocolate, you don’t need the whole thing

Instructions

  1. Melt the chocolate and pour it into an ice cube mold, or any small ice cube sized mold, and freeze
  2. In a small bowl whisk ALL dry ingredients
  3. Add the milk and vegetable oil and mix until well combined,
  4. Pour batter into a greased microwave-safe mug
  5. Pop out the frozen chocolate and insert it into the center of the mug until no longer visible, but not touching the bottom
  6. Cook the cake in your microwave for around 70 seconds on high (Note: A napkin or piece of paper towel underneath the mug will catch any overflow)
  7. Once the mug is cool enough to handle, place a plate upside-down on top of the mug and flip both over at the same time
  8. Pat the mug lightly, and lift up and voila! You now have your very own scrumptious chocolate lava cake! Enjoy warm!
