Lemon Buttercream

This recipe is AMAZING, especially on a strawberry cupcake for a Strawberry Lemonade treat! Perfect on a spring occasion, or any time of year! This delicious recipe also has a perk, its SUPER easy and you don’t need a bunch of ingredients! Just remember to zest the lemon before you juice it, I’ve made that mistake one too many times.

Ingredients

  1. 1 cup butter softened
  2. 2 Tablespoons lemon zest
  3. 1 pound powdered sugar
  4. 2-4 Tablespoons lemon juice fresh squeezed

Directions

  1. Place butter in bowl of a stand mixer. Mix until soft and creamy. 
  2. Mix in lemon zest. 
  3. Mix powdered sugar into buttercream one cup at a time. 
  4. Mix in lemon juice 1 tablespoon at a time. 

NOTES:

Makes around 2 cups
