This recipe is AMAZING, especially on a strawberry cupcake for a Strawberry Lemonade treat! Perfect on a spring occasion, or any time of year! This delicious recipe also has a perk, its SUPER easy and you don’t need a bunch of ingredients! Just remember to zest the lemon before you juice it, I’ve made that mistake one too many times.

Ingredients
- 1 cup butter softened
- 2 Tablespoons lemon zest
- 1 pound powdered sugar
- 2-4 Tablespoons lemon juice fresh squeezed
Directions
- Place butter in bowl of a stand mixer. Mix until soft and creamy.
- Mix in lemon zest.
- Mix powdered sugar into buttercream one cup at a time.
- Mix in lemon juice 1 tablespoon at a time.

Makes around 2 cups
