Vanilla Crazy Cake

Makes One 8” Round cake // Originally Free from eggs, milk, peanuts, VEGAN

Ingredients

1 ½ Cups Flour*

1 Cup Granulated Sugar

1 Tsp Baking Soda

½ Tsp Salt

1 Tsp White Vinegar

5 Tbsp Vegetable Oil

1 Cup Water

1 ½ Tsp Vanilla Extract

DIRECTIONS

Preheat oven to 350 degrees F (175 C). Mix the dry ingredients in a greased 8” round (or square) baking pan.

Make 3 depressions in the dry ingredients- two small and one large. **Pour the vinegar and vanilla in each of the two smaller depressions, (vinegar in one, vanilla in other), and the oil in the large one.

Pour water over the entire thing and mix until smooth.

Bake on the middle rack of the oven for around 35 minutes. Let it cool, then top with your favorite frosting and enjoy!!

*You can use gluten free flour, ** it’s okay if some spills out

These cakes were popular during The Great Depression when dairy products and eggs were expensive and hard to get.

I love this recipe because as a teen who loves to bake, I have to clean my baking dishes, and the butter dishes and batter bowls are always the worst. But guess what!? This yummy cake needs no butter AND no bowls!! AND there’s another surprise, its allergy friendly!

When I first made this cake, I couldn’t believe how good and moist this cake was, now it’s my go to recipe!
