So right now I am visiting family in the United States of America, we all got tested for the virus and are all negative! So my aunt came to spend the night and I wanted to bake for her, but she is vegan, so that makes it a bit harder. But I am so thankful for this amazing Lemon Crazy/Wacky Cake recipe! It is completely Vegan, delicious, really easy, and moist! So I used a double batch of Lemon Crazy/Wacky Cake, Lemon pudding, and canned Pillsbury White frosting. Yes, I know, maybe I should’ve made my own frosting. But since its in the summer I really don’t want to take my chances with a melting cake and butter yellow frosting. Also, the Jell-o brand of Lemon pudding is completely Vegan, and so is the White frosting. You can also put Sprinkles in the cake batter to make it even more festive!

Here’s the How to:
You will need:
2 Pre-baked Lemon Crazy/Wacky Cakes, recipe below (bake in an 8″ round baking pan)
2-3 Pillsbury White frosting Cans
1 Package Pre-made Lemon Pudding, using only 1 1/2 cups Coconut milk
Rainbow Sprinkles and Yellow food coloring
A Cake stand and equipment needed to frost and decorate cake (Knife, offset spatula, piping bag and tip, etc.)
Instructions:
Place first cake onto cake stand and put a very thin layer of frosting on top, then, using a tip-less (cut the bag so you have a big hole at the tip end) go around the edges of the top of the cake to create a buttercream (frosting) border.

Next place a little bit of the Pre-made Lemon Pudding in the center.

Then carefully stack the next cake on top.

Then, using the piping bag you already filled with no tip, and starting from bottom to top, pipe stripes along the whole side of the cake.

Then, using an offset spatula, cake smoother, or knife, smooth the sides of the cake, adding extra frosting as needed. When you are satisfied with the sides, it doesn’t have to be perfect :),frost the top of the cake, then go ahead and dye some frosting a pale yellow and do little rosettes on the top of the cake, making a border. Then sprinkle some Rainbow Sprinkles over the top onto the border.


Voila, you’re done!
