This recipe is for a flexible cookie dough that you can add any mix-ins you want into! I’ve added loads of different things, including some holiday spices, marshmallows, and even bacon. These cookies are incredibly delicious, and super easy too. They cook in about 10 minutes, and make almost 4 dozen. You do not even need to wait long hours for these in the fridge to harden up, they are ready to bake right after mixing! The recipe is just a plain cookie dough that makes chewy, soft cookies. But you can add any flavoring, spices, or mix-ins you want. I included some mix-in ideas before the recipe, however you can use whatever you would like!
A very important tip, *DO NOT under-mix your butter and sugars, you want it to be creamy and well-mixed, no big clumps of butter or sugar. But when you add the flour be sure to only mix until just combined, because you will end up aerating the dough (adding air) which causes the cookies to rise and then fall, leaving you with flat, crispy, and dense cookies.
To make these allergy/diet-friendly, dairy free butter sticks by Country Crock make this recipe easily dairy free, and use your favorite dark chocolate or dairy free chocolate chips as well. Using your go-to all-purpose gluten free flour blend can make these cookies gluten free as well. Don’t eat eggs? Use aquafaba! Aquafaba is the liquid that drains from your can of chickpeas, use 3 Tbsp of whisked aquafaba per egg being substituted. So you would need 6 Tbsp for this recipe.

Some flavor ideas to get you started
Add about 12oz of chocolate chips for chocolate chip cookies
Birthday cake cookies, 1/4 cup sprinkles and 10oz white chocolate chips
Bacon chocolate chip, 12oz chocolate chips, 1/2 cup crumbled crisp-cooked bacon
S’mores cookies, add in 12oz of chocolate chunks, and a couple handful of mini marshmallows (I just added them until I was satisfied with the amount π
Roll plain dough in cinnamon and sugar for an easy snickerdoodle
Spiced cookies, 2 1/4 tsp cinnamon, 3/4 tsp nutmeg, 3/8 tsp ground cloves (add in during flour, not after)
Ingredients
1 cup butter
3/4 cup white granulated sugar
3/4 cup brown sugar
2 eggs
1 Tbsp vanilla
2 1/4 cups flour
1 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
+ Desired mix-ins
Directions
Preheat oven to 375 F, Beat butter, both sugars, eggs and vanilla until creamy*.
Beat in flour, baking powder, salt and baking soda until just combined.
Now add Mix-ins until every scoop has some, or desired amount.
Scoop onto baking sheet around 2 inches apart from each other, bake for 9-10 minutes on middle oven rack, cool on baking sheet for 1 minute. Keep in an air-tight container after cooling, makes around 4- 4 1/2 dozen.
